Day of Rest

Sundays around our house are usually spent cleaning and doing yard work and laundry. We call Sunday "work day", which is ironic because even God rested on the seventh day. For us though, it's the only chance we have in a week to get anything done, so no rest for the weary! This past Sunday, however, while we did manage to get some stuff done, we mostly eschewed routine and spent the day focusing on food and family rather than work. So, the floors may be a little messier this week, and I may have to do a load of laundry or two on a weeknight to keep us all in clean clothes, but at least we finally got to enjoy a Sunday! That's what summer is all about, right?

My Dad and Jen stopped by for a visit. Jason grilled some Tequila and Lime Marinated Flank Steak, which was nothing short of mouthwateringly delicious. This is my favorite way to cook flank steak. Because there's such a low fat content, it can be very dry, but the tequila marinade adds an amazing savory depth of flavor. We marinated it for about 4 hours and cooked it medium rare, it was heavenly! To go with that, I made a salad of black beans, roma tomatoes, cilantro, jalapeno and grilled corn with a Basil and Lime Vinaigrette. It was the perfect accoutrement to the steak. Jason also stuffed some jalapenos with cheese and threw them on the grill too. The four of us scarfed everything down! Summer food is all about spice and citrus for us, we rarely cook a meal without peppers and lemons or limes when it's hot outside. As I've said before, I'm not much of a summer person--but I do love summer food!

Instead of using the recipe for the salad, I just threw in black beans, chopped roma tomatoes, cilantro, grilled corn and minced jalapeno.

I wasn't going to try these, but they were surprsingly good and not too hot at all. They had a nice crunch too.

Unfortunately there's no "after" shot of the flank steak, because it got eaten too quickly! Sorry about that, I feel like I'm robbing you of the best part. You'll have to make it yourself and find out--I can assure you it will have been worth the effort!

While we made dinner, Brady and Brynne spent time with their Grandpa Lewis and Grandma Jen...

After the meal, we had watermelon for dessert. Brady couldn't get enough, and neither could Miss B! She kept grabbing at it and pulling it to her mouth, so we let her have an "official" taste. She loved it!

That was our Sunday. Hope yours was spent getting some "rest" as well!
